I've heard that you can string a 12 string guitar as a six string. Has anyone done this? If so, does it work well?

Location: Phoenix AZ | OK, this is a really stupid question, but WHY would you want to string a 12 string with only 6 strings? I could understand if you already owned the guitar, but you say you are shopping for one on ebay. Why not just shop for a 6 string guitar?
I admit, I have tried stringing one of my 12's with only 6 strings and it worked OK. But it bothered me that the strings were not symmetric on the fretboard. I would recommend if you do this, that at least you get a 6 string nut so things are nicely centered.
