I know that cracks that appear are signs of too little humidity. What would be a sign of too much humidity?

1 mold on the fret board...
2 high arch in the top. can cause bad playability in some guitars where the neck stays put.
3 strings die fast
4 can comprimise water base glue bonds
5 high hunidity to really dry conditions can be bad.. Shipping a guitar from hawaii to norway over night...
6 woods expand and contract at different rates so you may see pronounced seams..
7 machine heads may start to pit or corrode

Am i forgetting anything???

Mist or fog coming out of the sound holes, that and small amphibious animals living inside would all be signs of too much humidity. Sorry, all wise-cracks aside;

In the humid summer months my acoustic guitars get a bit "rubbery". The volume seems to go down a bit and the action comes up a bit. I dont think its a big problem unless you get to the humidity levels that causes the symptoms mentioned above.

It sounds like your hygrometers are inaccurate. Here's what to do:

Fun science test for hygrometer accuracy:
If you really want to know if your hygrometer is right do this:
Gather these Matierials-
Large zip lock baggie
1/4 cup salt
1/16 to 1/12 cup water
juice glass
hyrgometer

Follow this procedure:
Mix salt and water in the glass
Put into zip lock bag with the hygrometer
Seal it
Wait 8-12 hours
In a closed system with damp salt the RH is ALWAYS 75%
Adjust your hygrometer reading accordingly.
I bought 2 hygrometers
http://www.musiciansfriend.com/srs7/g=home/search/detail/base_pid/4...

and

http://www.stringsbymail.com/catalog/accessories/default.asp#hygro

The second one is the same as the humicase hygrometer sold on musicf'ers and cost $15.

I found the P3/Humicase to be more accurate @ only being off 1%
The planet waves one was off by 3%
Not a problem though, just remember how far off the reading is.

Let us know what hygrometers you have so that we don't buy them!

You gotta rule out whether humidity is the culprit. Put your guitars in there cases right away, and do the above test. Keep them in their cases, it's easier to keep track of the humidity.

After seeing the guitar that came back from Hurricane katrina , It can be bad.. Really its not bad unless it is in it for a long time.. Acoustics always sound better dry and the strings seem to last longer.

I just ordered 2 of this model: Caliber III @the $19.95 price. Dave, at GuitarAdoptions, recommended it. Supposed to be accurate to +/- 1% for humidity. Thought I'd give 'em a try. Don aka Fingers

I don't think it ever gets above 30% humidity hear and my Matrix has been out in it for most of 27 years. No cracks. The Balladeer I just got from Iowa, where the humidity is rarely under 80% has several that it had when I got it. Seems odd, but so is the owner.
