What kinds of glues do you use when working on guitars? I have a Rosette coming loose from my 1861 and the edge or 2 of the epalettes on my Adamas w597.
So Whats best to use?

Cyanoacrylate (Superglue). Stew-Mac sells various thickness grades for guitar work. They can even be used to fill blems and cracks in finish. Another nice thing about them is that the solvent (acetone) doesn't harm the urethane finish on Ovations.
