Most factories use the kiln method as air-drying takes a long time, and lumber stock which has been air-dried tends to be more expensive. Whether the length of seasoning would make a quantifiable in the tone is debateable. The only thing that makes a guitar open up is playing it. A 100 year-old guitar that has never been played is essentially NOS and wouldn't sound a whole lot different to the day it was built. That's why the best sounding vintage guitars are generally the ones that show a lot of playing wear.

"My Froggy bottom F has german spruce which was bought by Michael Millard in germany from a bin labeled "cut between 1750 and 1895". The grain is extraordinarily tight so i imagine this tree germinated about the time JS Bach was conceived." Steve

Pretty exotic looking wood that's for sure.
