This year was the first in a long time that our turkey wasn't "weberized" -- we got new convection ovens this year and had to try them out. Worked really well ... although definitely coming up short from our usual mesquite-Weber-smoked bird. Prepared the lucky dinner centerpiece as usual ... make a rub of herbs, olive oil, minced garlic, ground sea salt, minced onion and massage into the turkey everywhere. Cavity gets a bed of onion cap, whole herbs, whole garlic and apple pieces. Cook until tender and juicy ...

I take those out before it goes into the oven. The kids saw me taking that stuff out and FREAKED!
