I can't think of a more versatile guitar than a good old Ovation Legend/Custom Legend. If I could only have one that would be it. Shallow bowl cutaway, tho I guess most people would take the deep bowl version.

OK ... After thinking really hard for the last couple of days (that's how long it usually takes me to process a thought nowadays) ... I've decided that the one guitar I would want is one that hasn't been made (as far as I know), so it would have to be a custom order.

AAA Cedar-topped Adamas I dreadnaut cutaway slothead in tobacco burst, #47 Neck, with deep contour bowl, VIP Electronics, and some of Templeman's carved walnut tuner buttons. (satin finish) THAT would make me happy.

Oh, you mean in THIS lifetime? Tough call... But if it really came down to just one guitar, comfort would probably need to be considered the first priority. That said, I might sacrifice the angelic qualities of my sweetheart Adamii for a slightly worn but nicely set up 1619-4 with light strings.
