One of my favorites is the acoustic backing Rod Stewart's "You're In My Heart". I especially like the intro.

i don't know why...

Guys, quit listening to this pop spoo.
Go listen to a bunch of good bluegrass and country and there will be too many good acoustic solos to mention. Stuff by Brian Sutton, Tony Rice, Brad Davis and on and on.............
Bluegrass
I. The former No Speed Limit band...anything...
II. Wayne Henderson and friends...anything
III. Spencer Strickland...great mandolin picker and only 23 years old...plays with Gerald Anderson...
IV. Stevie Barr...banjo picker extraordinaire
V. The late great Jimmy Arnold...one of the greatest banjo pickers and the greatest tragedy of all time....trust me...

Country
I. Ricky Skaggs...Anything
II. Tony Rice...anything
III. Vince Gill...one of the best pickers and singers anywhere...

For melodic pop spoo, I've always like the twin acoustic guitars during the break in Runaway Train by Soul Asylum.

Moody gave me a CD a couple of weeks ago of a bluegrass/country album by Tony Rice and Norman Blake. There's some pretty wicked stuff on there.

In the world music section, I like Makada by Sergio Lara.

I guess it wouldn't count as a solo, but the acoustical intro to "Crazy On You" by Heart stands out in my mind
