Flatted - same as unflatted - just move all of the chords down 1/2 step - for example in A the I-IV-V is A - D - E, in A flat, they would be A flat, D flat, E flat.
Minor - basically the chords would all be the minor versions, but there are alot of different substitutions you could make - one common one is to substitute a dominant 7th chord for the minor chord for the V chord (so Am, Dm, E7).
