Aside from the material differences, what is the difference in playability, sound, or any other differences between the necks of the Adamas I and Adamas II???

Adamas I necks are 24 frets Adamas II necks are 22 frets normally,otherwise they use the same black walnut fretboard just fancier inlays on the Adamas I
Cosmetically they're are some differences but I don't think it really changes the tone

A point of interest, Adamas necks are the two piece walnut and fretboard, the Adamas 2 has a conventional 5 piece Ovation neck with a walnut fretboard

I always wondered how difficult it would be to convert my 1581 to an Adamas I??

Simple..just get a 1587 Adamas I neck ...oh and a carved Adamas bridge..then pay somebody good many hundreds of dollars to swap the neck and bridge and Voila you have an Adamas I

‘Got that T-shirt… my wife and I both went through advanced stage cancer and I’ve almost died twice from sepsis. All within the past 5 years. I’m not complaining about what guitars I don’t have, ‘just saying how nice it would be to play some others too. What I have now are the favorite “players” that I’ve owned, and they are phenomenal. Once in a while a guy can get kinky, and want to try out some new stuff… guitars that is.
