Can anybody tell me anything about the larger pickups that I have seen on some breadwinners? Anybody have any for sale?

Ovation called them "Toroidal" pickups. A toroid in electronics relates to a circular or donut shaped coil, so maybe they did something like that with the coil windings. They look like humbuckers but are actually single coil pickups. I've seen them crop up on ebay very occasionally.
