What kind of wood is the Ovation bridge? I had assumed (always a poor choice) it was walnut. So I got a piece and cut several blanks for the repair I intend to do...but the grain looks Much coarser. I'm not a good judge of wood types if I didn't cut the tree down myself... (even then I only know it's quality for burning...)

Pretty sure it's walnut. The grain structure may not have much to do with strength, just appearance. You might have cut the block in a different way than the factory does. Like, flat-sawn vs. quarter-sawn?

Maybe test some stain on one of your new pieces and it might match up more alike to the factory bridge than it appears it will. And speaking of burning, walnut is the hardest of the soft woods and burns great. Soft enough to light up easy, and hard enough to provide long lasting heat (dang.. I should write ads for Viagra).
