Have burrs on a couple frets occasionally catching fingers. Looking for suggestions on a fix. Not a humdity issue but a fret finish issue. Just file edges? How to protect the binding and fret board when doing the filing?

If it is really not humidity and just the sharp ends hanging out a bit...
You need a "Fret End File".
Search for that. Like this one
Some are triangular. Some a thin and flat.
But the all have a rounded edge to keep you from cutting into the fingerboard or binding.
As to what to do... Watch this video all the way through. Especially after 2:00 to the end. HERE Pick and choose what you need.
Personally, I only had to do this once on a Parker P44 (now long gone).
I did not tape the fingerboard edges. And neither did the guy in this video.
But he was doing all kinds of other stuff.
If you are very careful you may not need to tape the binding.
But if you have some blue painters' tape lying around, I would use it, just to be safe.
