Does Ovation, and other guitar makers always pick higher grade woods for natural finishes? For example, does a Custom Legend in a natural finish use the same AAA spruce you would find on one with a black finish? Is there a bit of give and take when it comes to painted spruce tops?

Not sure about Ovation but it's pretty common throughout the industry that graded top sets with cosmetic issues are allocated to solid colour or sunburst finishes. This does not mean that these woods are necessarily "lower grade" as there is far more to wood-grading than appearance, and it certainly does not mean that sunburst or solid finished guitars will not sound as good as natural finish guitars
